Milk washing is an old bartender's trick for clarifying drinks. We use it on coffee: the milk carries away the harsh edges, and what's left is clear, soft and bright.
Amber and see-through, more like a spirit than a coffee.
Silky like a latte, without the heaviness. The bitter edge leaves with the milk.

None of this happens in front of you. Here's what goes on before the drink reaches the café.
It starts as real coffee, brewed strong and fresh.
We build the flavour first: yuzu, a little honey for body, and citrus for brightness.
Then it goes into milk. The citrus makes the milk gently curdle, and those curds grab the harsh, bitter edges of the coffee.
We leave it completely still and let the curds come together.
First pass: lift the curds out.
Second pass: the liquid runs back through the curds themselves, the best filter there is.
Third pass: slowly through paper, until it runs clear. No squeezing, no rushing.
What's left is clear, silky and smooth, with the bitterness gone and the coffee still there. Sweetened to your taste when it's served.

No. "Milk punch" is the name of the old technique, and "whiskey" describes the drink's depth and colour. There's no alcohol in it.
Yes. It's washed with milk. The curds are filtered out, but some milk proteins stay in the drink, so it isn't dairy-free. A vegan version is one of the things we might work on next.

Also in the drinks: coffee (so, caffeine), honey, and fruit — yuzu and lemon in the Yuzu, pomegranate in the Pomegranate. Honey means it isn't vegan, and it isn't suitable for babies under one.
